Jalapeño Cheese – Brush remaining Focaccia with garlic oil

Jalapeño Cheese Brush remaining Focaccia with garlic oil and fry, butter side down, in a hot skillet until golden brown. Top with tomatoes or cherry grapes, chopped garlic, fresh or dried herbs, sea salt and olive oil. This focaccia dough is perfect for making homemade pizza; we use it in our Mediterranean Pesto pizza recipe. Let the yeast rise if you’re not sure if it’s fresh so the dough can rise. Other ingredients include olives, pickled artichoke hearts, roasted red peppers, shallots, potato slices, roasted garlic, vegan pesto and caramelized onions. I prefer to use a bread mixer because it’s much easier to keep the dough moist. Brush the dough ball with olive oil and place it in a large bowl covered with a damp kitchen towel. Start with ¾ of the flour and then add more, using the minimum amount needed to keep the dough manageable. In a large bowl or mixer, mix hot water, sugar, yeast, salt, and ¾ of the regular flour.
